Bundaberg QLD and Cudgen NSW are "sweet" little pieces of Australia where fresh produce thrives. Rich soils and ideal climatic conditions provide the perfect platform for growing premium quality Sweet Potatoes.

The Hydro Produce family has been farming since the 1940's. Our produce is grown by families who have a deep seeded connection with the land and a true understanding of quality. Collectively we produce thousands of tonnes of Sweet Potato, creating millions of delicious meals each year.

Approximately 600 acres of land are farmed annually. Our Bundaberg farms provide year round supply and Cudgen farms are in production from February until October.

Crops are planted at each farm on a rotational basis to ensure we can supply the market with produce that is harvested fresh and on demand for optimum quality and flavour.

  • Gold Sweet Potato

    Gold

    The most common Sweet Potato you will find in store, characterised by their bright orange flesh which darkens when cooked. Sweet-nutty like in flavour they are perfect all-rounder to keep in your pantry. Enjoy them; roasted, mashed and baked.

  • Purple Sweet Potato

    Purple

    Purple skinned with a white flesh and sweeter in flavour than the Gold. Purple Sweet Potatoes make for a great twist on homemade oven roasted Chips.

  • Hawaiian Sweet Potato

    Hawaiian

    Creamy coloured skin with a purple flecked flesh. Much like Purple Sweet Potatoes, the Hawaiian variety is sweeter than the Gold Sweet Potato. They make a perfect addition to a roast dinner, chopped into cubes and roasted alongside other vegetables or simply served with peppery salad leaves such as rocket.

Here are two options to reduce the cooking times when cooking Sweet Potatoes - Split

Microwave & Oven method

  1. Preheat oven 230°C fan forced.
  2. Pierce the scrubbed sweet potatoes all over, at least 8 times with a fork. Rub the skins with olive oil and season well with salt and freshly ground black pepper.
  3. Put sweet potato evenly spaced around outer edge of the turntable (any small thin potatoes put into the centre). Microwave on High/100% for 12 minutes, turning the sweet potatoes over after 6 minutes.
  4. Transfer to a roasting pan, roast for 15 minutes until skin is crisp and centre tender.

Microwave Only method

  1. Pierce the scrubbed sweet potatoes all over, at least 8 times with a fork. Rub the skins with olive oil and season well with salt and freshly ground black pepper.
  2. Put sweet potato evenly spaced around outer edge of the turntable (any small thin potatoes put into the centre). Microwave on High/100% for 18-20 minutes, turning the sweet potatoes over every 5 minutes until tender when tested with a skewer (skin should not be wrinkled).
  3. Transfer to a plate, cover loosely with foil and stand 5 minutes.
